Adapted from “Basic Cooked Lentils” recipe in More with Less cookbook.

Step 1 Ingredients:
1 c dried lentils
2 1/2 c water

2 bouillon cubes
1 bay leaf
1 t salt

Bring to a boil and simmer for 20 minutes.

Step 2 Ingredients:
Saute together:
1/4 c margarine or butter
1 large onion, chopped
1 clove garlic, minced

1 t salt
1-2 T curry powder

Fry briefly.  Add all Step 2 ingredients to Step 1 ingredients and add:
2 T lemon juice
chopped parsley

Serve with rice, whole grain bread or a fresh salad.
