Adapted from “Basic Cooked Lentils” recipe in More with Less cookbook.

Step 1 Ingredients:
1 c dried lentils
2 c water

2 bouillon cubes
1 bay leaf
1 t salt

Bring to a boil and simmer for 20 minutes.

Step 2:
When lentils are cooked, add:
1/4 c apple or pineapple juice
1/4 c cider vinegar
1/4 c brown sugar
1 clove garlic, crushed
1/8 t cloves
sauteed onion, if desired

Heat to bubbly.  Serve over rice, a bed of crisp greens or with vegetable egg rolls.  We also served it with the pineapple from which we used the juice!
